Clean eating is where it’s at! My energy is up, my moods have stabilized, my body just feels good!
So what is clean eating exactly? Basically, eating all foods in their natural state as much as possible. The less gnarly “stuff” that happens to your food from its source to your plate the better. You want to opt for organic fruits and vegetables, pasture-raised meats and eggs, and, of course, zero processed foods.
Lately, I’ve been searching to find different ways to cook vegetables, specifically cauliflower. I never know what to do with it besides make a pizza crust or roast it. I came across Lexi’s Clean Kitchen and her recipe for Cauliflower Rolls. I was totally sold on making them once I saw that they were topped with “Everything Bagel” seasoning. After all, this was my favorite bagel pre-candida.
Though these do not have the consistency of a chewy dinner roll, they make a wonderful addition to any meal. Maybe you’ll make them this Easter Sunday?
Lexi notes that if you have a larger head of cauliflower to add more flour and/or another egg. There is a little trial and error involved in this recipe. In fact, my ratios may have been a little off. I was able to make 6 rolls which makes me think I had too much cauliflower and should have added another egg and more flour. I also used flaxseed meal instead of almond flour because it’s what I had on hand.
“Everything Bagel” Cauliflower Rolls – from Lexi’s Clean Kitchen
1 head cauliflower, riced (about 3 cups)
2 tbsp almond flour (or flaxseed meal)
1 tbsp coconut flour
1 tbsp organic cornmeal (not paleo- sub almond flour/flaxseed meal)
1/2 tsp garlic powder
1/4 tsp Himalayan sea salt
1/2 tsp poppy seeds
1 tbsp sesame seeds
1 tsp dried minced garlic
1 tbsp dried minced onion
1/2 tsp Himalayan sea salt
Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
In a food processor, or using a hand grater, pulse/grate the cauliflower until a rice consistency.
In a bowl combine eggs, cauliflower rice, almond flour, coconut flour, cornmeal, garlic powder and salt.
In a separate bowl, combine “everything” topping ingredients and set aside.
Make 4 (or more) even sized balls and place them on the lined baking sheet. Sprinkle the topping pressing slightly into the top of each roll.
Bake 15-20 minutes until firm, or until bread-like consistency. It might be longer depending on how big the rolls are. Optional: Broil on high 3-5 minutes after baking.
Remove from baking sheet and cool directly on a cooling rack.
Serve as a side with your favorite meal, or with your favorite sandwich ingredients.
Well, Miss Lexi, you have certainly made quite a delicious alternative to the average roll. What a creative way to use cauliflower! I am really curious to see how these rolls hold up as sandwich “bread” too.
Again, there might be some minor tweaking involved, but overall, “Everything Bagel” Cauliflower Rolls were easy to prepare and very tasty! I highly recommend giving it try in your kitchen this weekend. Let me know how they turn out!
