Happy Weekend Everyone!
About a month ago, I was searching for easy healthy recipes to make for work week lunches. I came across Healthful Pursuit’s Candida Friendly Recipes page and was thrilled at the amount of delicious posts available. The first thing that grabbed my attention was the Ultra-Easy Vegan Taco Salad. Fact: it is “ultra-easy.” This is perfect for me because I don’t want to spend a lot of time preparing work lunches. I’ve been addicted to this salad ever since and it seems to be my go-to when I want something quick and satisfying to eat.
Unfortunately, when the above photo was taken, I was out of tomatoes and tortilla chips so it doesn’t represent the exact recipe. I’m sure you won’t judge me. 🙂 I also skipped on making guacamole, but I think dicing up a perfectly ripe avocado hits the spot. I’ve been topping this salad off with freshly squeezed lime juice. Chopped up cilantro would be a nice, fresh addition as well.
